pH testing only works with ionic, aqueous solutions (not that my chemistry is up to date or reliable...)
Otherwise, litmus papers would be all too easy!
Brewing bio. And still not breaking cars!

pH only has meaning if water is present. It's the potential for forming H+ ions and as far as I'm aware, it cannot occur without water.

I think that most well made bio ends up at just over 7.0 Probably the best way to get a ball park figure is to blank some IPA with a suitable indicator (something that changes at around 7) and see what happens, although I don't know what this really would tell us?
