VW Passat 130PD - very good cars, plenty of room, comfortable, plenty of of power even as std. Remapped will give a safe 165bhp. My estate remapped has given up to 55mpg. A 4motion would be better if you're looking at caravan sites as you mention, on the std map mine's given me 54mpg.
Audi A4 130PD - same engine and running gear as the Passat, but less room inside, between this and a Passat then go for a Passat.
Audi A6 130PD - Still less load space than a Passat estate
Audi A6 Allroad 2.5V6 Tdi - Would be a very good tow car even with std map, apparently the 165hp motor is the best of the bunch, but like Bertle says std economy will be down on the 1.9PD
Skoda Superb 130PD - don't seem to be many 130pd's around looking on Autotrader, and they're around 10k, earlier models are the 2.0l models, but those engines up to 2008/9 are known to have problems.

You can also get a passat 4motion or audi quattro with both the 1.9pd and the 2.5 v6. As far as I know they don't have air suspension. Both these models are permanent 4x4.

Both good and use the same system, but you'll pay a premium for the Audi name. No air suspension on either.

Yes an A6 quattro estate will swerve the air suspension issue. As for a passat I like mine a lot and have owned it for 5 years, I would have no plans to sell it except for the offer of a company van, I really am torn though, but maybe that should be a new thread.

What sort of MPG does your V6 passat manage Bertle?
7+ years of making bio.

On my journy to work which is 8 miles half b roads and half A1 and a relatively heavy foot it will do 30 mpg. Today we have come up to Birmingham for the night and at 70 to 80 it was 37 ish. If you drive like an oap it can get into the 40 bracket but not by much.  Lisa always seams to be able to get it to 40 I rarely do.....
