I think it was QI a couple of nights ago on one of the free channels, made the comment that flambeing only removed about 30% of the alcohol from a dish.
Similarly reducing a sauce with alcohol, only removed part of the spirit.
Is this likely to effect us when we try to demeth bio buy various methods?
