to the powers that be why cant i modify / edit a sent email?

Once you've sent it, it's gone, off to another server where it is outside your control.

bummer as i sent an email with alot of info in it ie: picture links with tags that i needed to copy paste without going the long way round, which i did, but ok...

Most email clients/webmail systems will save a copy in a 'sent' folder.

i can look at it as itsd saved, just cant open it say in edit to copy paste all the html tags and text ect in one go...

can you click reply/forward/quote or something like that ?
that should give you the original message to work with ;)

If you select and copy the content, the html and tags should come with it - even if they are displayed as tags and not the code.
